This salad challenge was really fun and definitely helped me get out of a lunch time rut… but it also started me on something else… it has really inspired me to try more and more new things… this weekend I plan to tackle a gluten-free cake made with beets! (It’ll be a practice run for my gluten-intolerant sister in law’s birthday in a few weeks!) I never would’ve done that before…
