When you don’t have time to make granola, this super quick superfood muesli is a great alternative. It takes about 10 minutes to make and you can throw in anything your heart, or body, desires without having to worry about texture and baking times.

Here are some healthy highlights of my superfood muesli:



Golden berries: Rich source of antioxidant vitamins A and C, good source of fibre, protein and anti-inflammatory bioflavanoids.

Raw cacao: Great source of minerals magnesium and iron and a super dose of free radical fighting, anti-aging antioxidants!
Pumpkin seeds: Excellent source of immune boosting zinc and vitamin E, have anti-fungal and anti-viral properties and offer a source of protein.
Dried apricots: Great source of fibre, excellent for eye health due to their antioxidant vitamin A content, and good source of iron for energy.
Oats: Excellent for heart health due to their antioxidant and cholesterol lowering properties, great for weight-loss and diabetes due to their blood sugar stabilizing effects.

Toasting the oats gives them a really nice flavour, but you can also just use raw oats. If you can’t find golden berries, use cranberries sweetened with apple juice, which have a similar sweet tart taste. Cacao nibs are actually bitter and marry well with the sweetness from the dried apricots. When buying dried fruit, look for ones that are naturally sweetened, unsulfured and don’t contain added oils.

Toasted Oat Muesli with Golden Berries and Cacao Nibs


2 cups large flake oats
2 Tbsp coconut oil
1 Tbsp coconut sugar
2 tsp cinnamon
½ tsp cardamom
¼ tsp sea salt
½ cup unsulfured dried apricots
½ cup golden berries (or cranberries)
1 cup pumpkin seeds
¼ cup raw cacao nibs

How to make:
In a large skillet, melt coconut oil. Add oats and sea salt and toast over medium low heat for 8 minutes, stirring constantly to prevent burning.

Just before taking the skillet off the heat, add cinnamon and cardamom. Remove from heat and add coconut sugar while still in skillet, stirring to prevent sugar from sticking to the skillet.

Cut apricots into little pieces and add to a large mixing bowl along with golden berries, pumpkin seeds, cacao nibs, and oats. Mix well and allow to cool completely before storing in an airtight glass container.


Makes 6-8 servings.


I had my muesli with some organic Greek yoghurt. There are also many dairy free versions on the market, like cultured coconut and almond yoghurts. For extra protein, top with some hemp seeds!
