Health benefits:

Basil – Provide protection to our cells through active constituents called flavonoids, particularly Orientin and vicenin. In studies on human white blood cells, these components of basil protect cell structures as well as chromosomes from radiation and oxygen-based damage. (Source)

Basil is also a good source of magnesium, which promotes cardiovascular health by prompting muscles and blood vessels to relax, supports adrenal function and energy production. Plus, basil has been shown to reduce cortisol production, which is important in the evening when you want to get to sleep!

Pistachios – Pistachios are one of the few nuts that contain a well-rounded balance of macronutrients (carbohydrates, protein, fats) and dietary fiber. According to the USDA National Nutrient Database, pistachios are also rich in minerals such as phosphorus, potassium, calcium, iron, magnesium, zinc, copper, and sodium – which are all essentials for healthy stress management and supporting the adrenal glands. They also provide you with essential vitamins like B-vitamins, vitamins A, C, E, and K, as well as choline and betaine. (Source)

Pistachos have a high copper content, which helps in the higher absorption of iron into the body from food sources. This can help combat conditions like anemia as the hemoglobin count rises and increases blood flow.

I would suggest doubling this recipe up as it makes about 2/3 of a cup!

Basil + Pistachio Pesto 
Enjoy with cooling cucumber, radishes, or gluten free crackers! If you add extra olive oil, you can use this pesto for pizza or pasta toppings or even salad dressing!

  1. Roughly chopped basil and garlic add all ingredients in to a blender, except the olive oil. Pulse to mix slowly, then stream in olive oil.
