Kale Lovin Salad with Hemp and Pomegranate

One of my favourite salad recipes from the Non-Diet Weightloss Workshop is the Sweet Kale Lovin Salad with Hemp and Pomegranate. This beauty is filled with antioxidants, rich in metabolism boosting omega 3 fatty acids from the flax oil and protein power of hemp seeds. Glow from the inside out!

Sweet Kale Lovin Salad with Hemp and Pomegranate

2 small bunches of dinosaur kale, or 4 handfuls of baby kale
2 medium tomatoes
2 slices red onion
1 small yellow pepper
3 Tbsp flax oil
3 Tbsp orange juice
1 Tbsp lemon juice
⅓ tsp sea salt
6 basil leaves
1 large garlic clove
4 Tbsp hemp seeds
¼ cup pomegranate seeds (can substitute cranberries sweetened with apple juice)

How to make:
Wash kale and remove stems. Chop kale very finely and add to big salad bowl. Roughly chop basil leaves and add to kale. Add flax oil, orange juice, lemon juice and sea salt. Massage kale with your hands until it wilts and has almost a cooked texture. Crush garlic with a garlic press or mince finely. Mix into salad.
Slice onion thinly, chop tomato and bell pepper into little bite sized pieces and add to salad. Top with hemp and pomegranate seeds.

Makes 2 main dish or 4 side dishes.
