The secret sauce to eating more veggies? Our Balanced Green Goddess Dressing!

In the colder months, our body craves more root veggies that help to retain heat and provide immune supporting properties, like rutabaga, beets, sweet potato & carrots. To add in some vibrant raw nutrients, we can use more fresh herbs in our dressing and seasonal fruit like pomegranate. To give our immune system and mood a much needed boost during this cold season, we can add gut friendly ingredients such as raw sauerkraut and a dose of medicinal mushrooms!

Here is what you will need to make this mouthwatering and warming recipe:

Winter Nourish Bowl

  • 1 small rutabaga
  • 1 medium beet
  • 2 carrots
  • 1 sweet potato
  • 2 Tbsp avocado oil
  • ¼ tsp sea salt
  • ¼ tsp garlic powder
  • 1 tsp dried parsley
  • 6oz of chicken, cooked (or tempeh)
  • ½ cup raw sauerkraut
  • ¼ cup pomegranate seeds

How to make:

  • Preheat the oven to 400F.
  • Peel vegetables if needed and cut into bite sized pieces.
  • Add to a roasting dish and toss with avocado oil.
  • Mix together seasoning and sprinkle over vegetables, giving them a quick toss for even coating.
  • Roast for 45-60 minutes, tossing once halfway.
  • Assemble your bowl with roasted vegetables, heated chicken, sauerkraut, and pomegranate seeds.
  • Makes 2 servings

Balanced Green Goddess Dressing

  • 2 cups cilantro, roughly chopped
  • ½ cup chives, roughly chopped
  • ½ avocado
  • ¼ cup extra virgin olive oil
  • ¼ cup raw apple cider vinegar
  • ¼ cup filtered water
  • ¼ cup lemon juice
  • ½ tsp lemon zest
  • 2-3 garlic cloves, crushed

How to make:

Combine all ingredients in a blender & buzz until smooth.
