8 WASY TO GET MORE VEGETABLES INTO YOUR DIET

Whatever diet you are currently following, I’m sure the one philosophy we can all agree on is that adding more vegetables to your diet is the best way to get healthy and stay healthy.

Vegetables provide us with fibre to keep the toxins eliminating out of our systems, antioxidants to prevent premature aging and associated problems, give us beautiful glowing skin, they ensure we keep our waistline and blood sugar in check and of course provide us with a ton of energy.

The biggest complaint I get from my clients is that they have run out of ways to use vegetables, or that they have a hard time feeding veggies to their family. And sometimes you just don’t feel like a big ol’ salad or steamed broccoli…

So here are some fun and child tested ways to ensure that all your meals are packed with health enhancing veggies!

8 WAYS TO ADD VEGETABLES TO ANY MEAL

1.Steam cauliflower florets until soft (10 min) and add to food processor. Blend in a food processor and process until smooth and add to Amy’s White Cheddar Mac and Cheese or other pasta dishes like fettucine alfredo.

2.Steam cubed butternut squash for 5-10 minutes (frozen or fresh) and add to food processor and process until smooth. Add to pasta sauces, burgers pancakes, smoothies and muffins. I LOVE butternut squash soup as well.

3.Bake sweet potato or yam at 400F for 1 hour. Mash with a fork and use in veggie or meat burgers, pancakes, muffins, and omelettes.

4.Shred carrots in a food processor or by hand. Sautee for 5 minutes in coconut oil and add to omelettes, pasta sauce, or burgers.

5.Roast spaghetti squash for 45 minutes at 400F. Cut in half, scoop out the seeds and use in pasta dishes made with spaghetti noodles.

6.Make a chocolate smoothie and add a handful of spinach.

7.Peel and cube fresh beet root. Steam beets for 10-20 minutes and add to a smoothie with berries and cherries. YUM. Adding celery to smoothies is another option.

8.Use a spiralizer cutter to prepare zucchini and or beets and carrots. Sautee for 3-5 minutes with coconut oil and add to spaghetti noodles or replace them all together.
