  1. In a large saucepan or pot, melt oil over medium heat. Add onion and cook for 5 minutes or until opaque. Add garlic, cinnamon stick, and allspice and cook for 30 seconds. Add tomatoes, beets, celery root, water, and broth.
  2. Cover, bring to a boil, and then simmer for 10 minutes over low heat. Stir in cabbage, carrots, and and cook for 10 – 15 minutes, depending on how crispy you like the carrots.
  3. Stir in vinegar and dill.
