You might of seen this golden little berry while cruising through the skin care section of the health food store, but these little beauties can be eaten as well. They taste sort of tart and bright and are super in small dosages:) They are native to China, Russia, and Mangolia, where they have been used for centuries for their health enhancing benefits. You can find fresh sea buckthorn berries in some health food stores as well as in supplement and skin care products. Shine from the inside out with a dose of golden superfood!

Here is what they have to offer:

  • Like any proper superfood, they are loaded with nutrients, with at least 190 bioactive compounds. Just one little berry contains more vitamin C than a whole orange, and it’s a great source of fibre, protein and loads of antioxidants.
  • They have excellent antimicrobial and antiviral properties as well as antioxidants that help to boost the immune system.

These little muffins are awesomely delicious and super quick to make, even on a weeknight. Freeze a few so you’ll have a  nutritious snack ready when you need it! If you can’t get your hands on these little super berries, you can substitute fresh cranberries which have a similar tart taste.

Pear and Sea Buckthorn Muffins – Gluten-free
½ cup millet flour
¾ cup sorghum flour
¾ cup oat flour (gluten-free)
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
½ tsp cardamom
½ tsp vanilla powder (or 1 tsp vanilla extract)
¾ cup coconut sugar
Wet ingredients:
2 eggs
1 cup applesauce (unsweetened)
½ cup milk of choice
¼ cup coconut oil, melted
1 pear (1 cup chopped)
¾ cup sea buckthorn berries (or fresh cranberries)
1 Tbsp apple cider vinegar

 

How to make:
  1. In a large bowl, combine all the dry ingredients. If using vanilla extract, add to wet ingredients.
  2. Core pear and chop into little cubes.
  3. In a second bowl, combine all wet ingredients and mix well. Add wet ingredients to dry and mix well.
  4. Grease muffin tray with a bit of coconut oil or use unbleached paper cups.
  5. Add batter into baking tray with an ice cream scoop or fill muffin tray 3/4 full.
  6. Bake at 350 for 30 minutes.

    Makes 16 muffins.
