healthy salad bowl, salad challenge

Since it’s a gorgeous sunny day here in White Rock (BC), I thought I would share one of awesome salad recipes from the Salad challenge (and the E-BOOK) This is my favourite way of eating, just some simple ingredients in a pretty bowl:) Filled with nutrient dense and delicious ingredients to keep me energized and shining bright:) Enjoy!

Bright and Sunny Salad Bowl

(makes 2 servings)

  • Big handful spinach (or more)
  • Handful cherry tomatoes
  • 1 carrot
  • 2 slices of red onion
  • 4 artichoke hearts
  • ½ avocado
  • Dollop of hummus (or another dip you love)
  • Handful cilantro or parsley

Dijon Dressing:

  • 1 Tbsp Dijon mustard
  • 1/4 cup camelina oil (or olive oil)
  • 1 Tbsp apple cider vinegar
  • 3 Tbsp water
  • 1 tsp raw honey
  • 2 Tbsp fresh dill or 1/4 tsp dried dill
  • Pinch of sea salt

How to make:

The amount for spinach depends on how you make the salad. If you want to leave the spinach raw, just add a small handful to each salad. If you want to steam it (which is how I prefer it) then use 1 big handful for each salad. It only takes about a minute or so to steam spinach, don’t over do it! Take the steamer out of the pot when finished steaming and allow the spinach to dry for a few minutes.

Cut cherry tomatoes in half, slice onion thinly, chop herbs finely, and shred carrot. Slice avocado into thin strips while still in the shell, then scoop out with a spoon. Cut artichoke into bite sized pieces. Add all ingredients into your salad bowl, top with a dollop of hummus, sprinkle of dulse, and some Dijon dressing.
